Nursing baby / time to wean?

So my son turned 1 on the 17th of this month..my original plan was to nurse for a year and then try to wean.. never did i think it’d be this challenging ! I need tips/advice.. At the very least night weaning because he still wakes up 2-3 times a night to nurse even though he gets a good late dinner before his nightly bath... i thought it would keep him full all night but boy am i wrong lol

following, today was our first day trying to wean one nursing session before a nap. She cried at me and signed milk :/. I feel bad.. im all shes known for a year for comfort and now I'm suppose to just stop :/. I'm having a tough time.

maybe try shorter sessions? I'm just playing it by ear amd only giving boob when he asks for it and not offering it up readily... like I try a sippy or food first to see if he will eat real food or drink some water or milk... if all three of those are a no and cuddles aren't enough then I bring out the boob... we are down to 2 or 3 times during the day (4 at the most) and maybe 2 times at night...

I night weaned around 5 months so I’m not sure if this would work. But I started by leaving a bottle of freshly pumped milk in the crib with her when I went to bed. She would get up and fuss then find it and go back to sleep. It was annoying because I had to pump before bed and sneak in with it before I went to sleep lol so that it wouldn’t go bad before she would wake up.
Once we got down to one waking we switched to water and that’s what we do now. Every night she gets a bottle of water in her bed and if she wakes up she will take a few gulps then go back to sleep.
At a year it’s not hunger it’s habit. They don’t need to eat at night, especially if he’s having a late dinner. It will take some willpower and some good strategies to crib the habit.

I tried doing it slowly like one session at a time but with my son it has always been all or nothing.. and it was sooo hard to do it like that! and worked like a charm doing it cold turkey, I mean they just catch on sooo much faster because your consistent every single time! sign and say milk or whatever word you use for nursing and when baby asks for it or pulls at your shirt get excited and say you want milk!? (Use lots of distraction) And tell him this ones all gone but go to the fridge and get him his cup and say the word you use for nursing to the cup, it took my son no time to stop asking but he did only sip at the cup and I had to constantly make sure he was drinking enough liquids which was annoying..however he came down with a cold AND ear infection annnd got super constipated from cows milk he was flat out miserable so I started nursing him again, after like 5 days!! Lol BUT trust me I thought it was impossible my son also woke that much a night and until I completely cut out night feedings he didn’t start sleeping through the night (which was very recent) ...and I’m excited to know when he’s feeling better I can do it easily again I thought it was impossible but you just have to stick to it! I’m considering nursing through cold and flu season though.
