is the little image for what baby looks like supposed to change in the middle of the week? I thought it would change when I started the next week in my pregnancy?

Lol nope so if you conceived on a Monday it will change every Monday if you conceived on a Tuesday it will change every Tuesday you have to be 7 days further for it to change

That’s normal... it will change every so often whenever you get to certain points.
