Duffins. (a cross between a donut and a muffin)

140g golden caster sugar

200g plain flour

1 tsp bicarp of soda

100ml natural yogurt or Berry flavoured

2 large eggs

1 tsp vanilla extract

140g melted butter, plus extra for greasing

12 tsp seedless jam

100g of white caster sugar mixed with 100g of icing sugar.

Heat oven to 190C/170C fan/gas 5. Lightly grease a 12 hole muffin tin. Mix the GOLDEN sugar, flour and bicarb in a large bowl. In a jug whisk together the yogurt, eggs and vanilla. Tip the jug contents and melted butter into the dry ingredients, fold in quickly.

Divide two thirds of the mixture between the muffin holes. Carfully add 1 tsp of jam into the centre if each, then cover with the remaining mixture. Bake for 16 to 18 minutes. Once Cook sprinkle with the sugar.
