Sugar drop after high carb meal?

I had pad Thai before and it didn't spike me so I ate it again with tofu. The difference was I had a half portion the first time and a full portion this time. This was around 245 I finished eating. Around 730 I was still full but forced myself to have a small meal because I knew I couldn't go to bed without eating at least something. I had to force it down because I was feeling so nauseated. I chalked it up to being full and started my clock to check my 1 hour post prandial. Post prandial after pad Thai at 1540, was 138. So Imagine my surprise when my post prandial at 2040 after a half portion of lasagna with sweet potato filling (which normally results in a low hundred to one teen PP reading) was 69. No wonder I felt so shitty. Treated for symptoms more than number because it wasn't the lowest I've been (that was 67 after forgetting to eat for 11 hours, funnily enough that's when I had the half portion of pad Thai except I ate it after I treated the low and PP for that event was 115) I'm thinking that the carb load was too high and my body just shot out too much insulin which wasn't taken up by my body effectively and led to the low hours after eating.

I made sure to have some protein after treating the low with one glucose tab that almost made me throw up, so I got the rest of the carbs from a Mandarin orange. Recheck was 70 fifteen minutes after treatment, so I had 6 oz of fairlife milk (another 6 carbs with 13 g protein) and rechecked again 45 minutes later and was 76 so I had another snack of six apple slices with some peanut butter to hopefully hold me til morning. I'll have to email the specialist Monday to see what they think but no more pad Thai for me I don't think.
