So, not junk (nothing against junk, love some junk!) but so so refreshing!

Peach & Cucumber Salad

Chop up some cucumbers and peaches (as many as you like. I tend to make a big bowl and eat it throughout the week.)

Throw in 1 diced shallot (little onion thing).

1 lime (squeezed, obviously.)

1 tablespoon of olive oil.

1 teaspoon of honey.

1/2 teaspoon of salt.

1/4 teaspoon of pepper.

Mix it all up and knock yourself out. It’s even better the next day after it’s had time to marinate/get cold in the fridge.
