Full time moms with an infant/child: Do you fix dinner nightly? How do you manage to spend time with your LO in the evenings?

Question

My husband doesn’t get home from work until almost time to bathe LO if not after. By time I get home, it’s changing the baby, giving him is snack, getting bottles washed and stuff prepped for the next day, feed the baby dinner, and still cook dinner for me and husband. By time I get done, I may have 5-10 to enjoy my son before bath and bed. How do you manage your schedule??

We cook every night but Fridays. My son has always loved to be involved with cooking. When he was a baby I wore him while I cooked. As he got mobile I just let him loose in the kitchen, he had his own cabinet of pots/pans/spoons (from the dollar store) and he went to town while I cooked. Now he’s 2 and he either helps us cook like mixing stuff or pouring a measuring cup, or he pulls all the chairs around the stove and creates a theater for him and his stuffed animals to watch us cook.

Sunday nights I make a big dinner, and Monday nights are leftovers for dinner. Monday night after my daughter goes to bed, I prep stuff for the next day, sometimes I might even cook stuff after my daughter goes to bed. I make enough for Tuesday and leftovers Wednesday, Thursday I might cook something super easy (or from freezer) or have something simple like salads or sandwiches, and Friday we order something. I know it’s a lot of leftover stuff, but it’s just what has to be done. 
Freezer: I prepare multiple meals in foil trays/tupperwares on the weekends and freeze them. This way you just take out a few every week, let them thaw and then pop them in the oven when you are ready for them. I do eggplant Parm like this, chicken soup, pizzas, lasagnas, chili, stews, etc.… Just to have quick meals to make that won’t take much effort from me.

Its all about preparation. On Sunday stick a whole chicken in a crockpot with some veggies. Monday throw leftover chicken and veggies in the stock with some water or broth and noodles and have soup. Tuesday have leftover soup and sandwiches. Wednesday make some kind of a chicken pasta like cajun chicken alfredo. Thursday chicken salad with lots of veggies. Friday night can be leftover night to finish up whatever you have left. Saturday make homemade pizza. Its super easy and a fun activity to do together. Utilize your crockpot and do big chunks of meat that you can use for multiple meals and not have to cook for more than like 15/20 minutes a night.

Remember ANY TIME spent with baby is not wasted! Babies soak in every second of mommy and daddy time. Even when you're feeding and bathing your LO, you're having good quality time with them. And I put baby in the highchair while I cook and he loves to watch me.
