Queso fresco, like Qotija cheese is the one you’re supposed to stay away from. 
Most other  Mexican cheese is fine. 
Side note: queso is the Spanish word for cheese

It depends what's in it. The place I went to couldn't tell me so I didnt risk it. Better safe than sorry in my opinion. If they can tell you what's in it tho and it's all safe then you're fine.

If it’s cooked, you’re safe.  I’d avoid raw queso unless you know it’s pasteurized.
