Vegan meal ideas?

I'm looking for some easy and healthy vegan meals to make through out the week. Even something that may take longer to make but stretch through a few days of left overs.

Trying to limit vegan freezer foods, as they're usually loaded with sodium. Also, since being pregnant I don't do great with red sauce or anything too spicy 😢
