What are some inexpensive dinner ideas?

Other than spaghetti or Alfredo. Those are what we usually have as a backup for when we need something quick and easy or I don't really feel like cooking.
It's just my husband and I, and he is a picky eater. I plan out our meals for 2 weeks at a time and I'm in a rut. I don't need super cheap meals, just wanting to change things up, without spending more than usual.
Although it is just the two of us, I still make a normal size batch of each meal so we can have leftovers.

Burritos, steam on bag frozen vegetables over rice, tuna, a handful of nuts with some cheese and friut, yogurt/ granola/ fruit parfaits.

The easiest beef nachos! Brown your hamburger, mix in any jar of salsa and a jar of yellow queso cheese and let that all heat together. That's it! Then put it on top of your chips and top with whatever stuff you like!

Spanish chicken - chicken thighs, chorizo sausage, cubed potato’s, carrots, leeks, onions, salt and pepper  - All in one pot & oven cooked for 45 mins. 😋 The chorizo will make it all juicy and give it a bit of heat!

Talapia is so quick and a bag of frozen talapia will last me forever. Tacos of any kind. Chicken and rice, canned chicken works fine as long as you season it well. Chili is also inexpensive and easy.

We usually do chicken tacos!
Crockpot some chicken breast with hot sauce, get some street tacos tortillas, shredded cheese, cilantro! They're delicious, easy, and we always have leftovers
