I would do some serious research into this but I can give you a general rehash of what I have found. The gold standard for testing intolerance is an elimination diet. So cut out a certain food like dairy, eggs, nuts or whatever you think you might have a problem with for a week or two and then slowly add it back in. If the symptoms return avoid the food. 
The blood test and saliva tests look for a substance called IgG and this is something your body slowly builds up the longer you eat a food. So imagine getting it back and all your normal foods appear to cause problems and all the foods you never eat appear fine.  
Try the elimination diet and write down your symptoms and see if it helps. You may have a general idea of what you don't do well with so eliminate it for 2 weeks and add it back in slowly. If there is no change then try something else. It will take a while but it will be accurate.

No, some intolerances & sensitivities do not have very reliable tests actually, as allergies usually do.
I have a gluten sensitivity, but a doctor did tell me so & to cut out gluten, and I got better and now I get super sick from tiny amounts of cross contamination, it's pretty undeniable gluten & I are a bad mix.
