Nutrition hack for meals
I’m currently 18 weeks pregnant and too tired to come up with dinner ideas for nutritious food that I can keep down. So for the last month, my husband and I have been preparing a soup that usually lasts us for a few days and supplements our meals.
It’s so easy to make. I sauté onions in olive oil, and then add a whole bunch of roughly chopped vegetables to the pot along with chicken broth, such as cauliflower, squash, cabbage, broccoli, spinach, tomatoes, sweet potatoes etc. I boil the mix with garlic powder and salt and then blend to make a creamy soup! That way I don’t feel guilty if I can’t keep down any actual vegetables. The cauliflower makes the soup real creamy and I add a piece of butter to my soup bowl.
Just thought I’d share in case someone needs a hack for consuming vegetables!
