How do I make sure my 14 momth old is getting everything he needs while we eat “vegan”?

I’m starting this new journey with my husband where we’re trying to cut out food that is bad for us and basically go vegan.

We aren’t fully going vegan, but we’re cutting out a lot of meat (eating it only about 3 times a week) and I’m now worried about my son not getting what he needs as he usually eats what we eat.

We’re starting this week, and there are some recipes that I will have to alter or maybe give him something different that day as they are spicy.

I’m very new to this so I honestly don’t know much. But would you say eating like this is good or bad for him? Is there anything I can give to make sure he’s getting what he needs? Im assuming if they’re “vegan” recipes and they’re healthy he should be fine, no? We also juice (fresh) almost everyday so he gets that as well.
