This is the base recipe I always use, but I usually make it with crispy chopped bacon and spinach added, use some rendered bacon fat in place of the butter, and top with ritz rather than panko. Always a crowd pleaser! Also, excellent topped with a dab of hot sauce.

Macaroni, obviously. I also like to add mushrooms, bacon or sausage and green peppers (sometimes).
I make a bechamel sauce from scratch, add a bit of salt and pepper then I add cheese to make it a nice cheesy sauce. I like Gouda but we normally do a mix of Gouda and Mozzarella because the Mozzarella makes it nice and stringy.
I then mix everything together and put it in an oven dish, BUT I do a layer of the macaroni mixture, a thin layer of cheese and then the rest of the macaroni.
I add MORE cheese on top, and then I also put sliced tomatoes on top.
I then bake until the top cheese is nice and crispy.
It's a LOT of cheese so I don't make it too often but it always goes down well when I do.
