vegetarian protein ideas?
We aren’t vegetarians but my LO isn’t doing great eating meat, other than meatballs. I make spinach and turkey meatballs so I know the quality of those is good but I’d like her to have variety! She used to love salmon but now spits it out. And spat out turkey on thanksgiving. While I plan to continue to try, i was hoping you vegetarian mammas could give some ideas for veg. Protein ideas. Ideally, something I could make in a batch and would either be good for 3-5 days or that I could freeze. My girl loves scrambled eggs so I was thinking I could scramble some tofu in with them but that’s all I really thought of. She also loves lentil soup but other ideas for lentils/beans would be great.
