Can someone explain how I am still protected on break week on the pill?

I don't understand how I am if I'm not taking the hormone to prevent ovulation

So I don’t know the exact calculations, but here’s the gist of it: years ago around the 60s, scientist created a method of birth control called the pill. The pill was to be taken everyday to prevent pregnancy. But to try to persuade the Catholic Church of being more accepting, they included a one week break to have a women have a period (withdrawal bleed). They used science to calculate how long a women can go without the hormone and not ovulate. They came up with 7 days (some pills now only have 4 day breaks). 
So really it comes down to the fact that the built up of the hormones after 21 days will allow a woman to take a break without ovulating. That why birth control pill must be taken perfectly or else ovulation can occur. But if taken perfectly it’s enough hormones. Birth control take a couple days to lower in your system during placebo week and when it dips low enough you get your “period.” Then after a couple more days you start on the next pack. It doesn’t stay low enough during that week since you start back the pill quick enough and don’t ovulate. I don’t know the exact science but that’s pretty much it

The pill is basically a high dose of estrogen for 3 weeks, so that prevents ovulation. Then, the last week, since you aren't getting estrogen anymore, the estrogen levels drop, and it causes your period to start.
