Disclaimer: I’m not vegan/vegetarian, but we eat plant based three days/week, and tonight we made delicious chickpea tacos (if I do say so myself!) 🌮

Chickpeas cooked in canola oil, lime juice/sherry vinegar, cumin, paprika, chili powder, cayenne, salt and pepper, tomato paste, minced garlic and white onion.

We used almond flour tortillas, topped it with micro greens, and

my husband also made a mango/root veg. salsa with radishes, ginger pickled beets, carrots, cilantro and mango, all minced together and marinated in lime juice.
