Cheesy mexican quinoa casserole. ❤❤❤❤

Half cup quinoa

1 Can of black beans drained and rinsed

1 cup veggie broth

1 red bell pepper

Half a yellow onion

1/4 cup green onion

1/4 cilantro

2 tbs taco seasoning

2 cups cheese

Throw everything except the cheese in the slow cooker for 3 ish hours on high. Mix a cup of cheese in and then top with cheese and let sit for like 15 minutes and serve. Top with avocado, green onion, possibly sour cream and tortilla chips.
