I know the second spelling is meant to be like "sail", but I keep reading it as "sai" (rhymes with kai) for this reason, I definitely lean in favor of Salem. Gray is the American spelling, Grey is from the UK, but both are pretty interchangeable in the USA. Grey is much more popular as a name spelling for whatever reason. If you want something a little different, spelling the middle name Gray would be an easy way to incorporate that.

My daughter’s name is Saylor Grey. We call her “Say Grey” for short, and I even came across a little girl named Salem Gray on IG, and they also call her “Say Gray”. 😍 
Id stick with the traditional Salem spelling. We picked the English “Grey” spelling because my grandma was born and raised in England and we still have strong family ties there. I personally think Gray and Grey are equally masculine and feminine. 🤷🏼‍♀️

So when I saw sailem spelled that way I hear it literally like "sail 'em" in my head, with a weird accent or something. I think Salem is better
