Do animals really know when something’s off?

Question

So I have a cat and she is a happy normal cat and loves everyone. Kids, guys, girls anyone. Well Iv been talking to this guy and I brought him to my house. My cat was terrified of him! Like she got bush tail a few times and was very scared of him. She wouldn’t let him touch her and was very skittish. Now this guy doesn’t have animals (I asked when asking if he was okay with cats) do animals really have ￼instincts? Should I be worried? Iv never seen her like this before..

I trust my dog if she doesn’t like someone. She’s the friendliest dog and some people she’s extra nervous around. My ex used to scare her, he turned out to be a lunatic, now I trust her instincts!

If the cats behavior is noticeably different with one individual I’d watch to see if she warms up to him. 
How long have you had your cat? They have really good memories, if she’s a rescue or adopted stray, something about him maybe remind her of a bd experience. 
If you had her since she was a little kitten, and she loves everyone else she meets, and she still doesn’t like him, be cautious.

I trust my dog. We got my German Shepherd (Bear) when he was 8 weeks old. We socialized him well and he is by far the sweetest dog ever, loving everyone in sight. I love to trail run and he always goes with me. Years ago we were running our favorite trail when we came around a bend in which there was a man there walking towards us. We’ve met numerous people in this same bend as well as other parts of the trail and Bear never cared but this time was different. He immediately stopped, back up to me and wouldn’t let me pass, the hair was standing up on his back and he began to growl and bark aggressively. The man stopped but then tried to continue to walk towards me but Bear wasn’t having it. It scared the man enough to which he took a different trail at the bend. I was shook. I had this horrible feeling that something was very wrong with that man and I continued to look over my shoulder the rest of my run. A week later a news story showed a picture of the same man who sexually assaulted a woman and nearly killed her not far from our encounter. Bear potentially saved me life and I’ll forever trust his instincts.

I do believe that our pets can have higher instincts. If your cat has always been ok with other people that you have introduced, but your boyfriend freaked her out, then I would take that as a sign.

My dog is very friendly even too friendly at times. He does occasionally get scared off large men and sometimes people he isn’t used to being around. I used to trust him it came to this because he would never growl or bark at anyone but has started doing so recently.

Does he have pets too? Could be something about his scent. Could also be someone in her space and she isn't happy about it.
My cat is extremely anxious, scared to death of men, would hardly ever let my ex husband touch him but when my boyfriend came to visit he jumped right in his lap and went to sleep without any issues. I think to a point they have instincts, no doubt. He just needs to suck up to her for a while. Offer a trail of treats, when he goes to pet her offer his hand palm up and let her approach

I'd be cautious. I know my cat to be very in touch with her instincts. If she was acting like that toward a specific individual then it would tell me something is probably off.
