Breastfeeding issue what should I do?

I am at my wits end with breastfeeding. I struggled at the beginning but now he latched well and after each boob he goes all floppy and milk drunk and comes away when his had enough.

My problem is I always know when something is wrong as he does this angry cry like his hungry even though his had both boobs and my boobs are quite soft after.

Anyway tonight he did the angry cry about 20 mins after feed partner managed to settle him down and his now asleep but I wanted to see if he was actually taking the milk because normally he does and tonight he seemed like he was sucking away for 30 mins and he seemed happy. Yet I pumped out my boobs to see if there were anything left maybe I could put in the freezer only expecting maybe something small but I got our 60mls.

Now at the moment he is 3 weeks old and he had around 60-90mls. Only know this due to when he was not patching properly I had to express. But it’s been the same amount for the last few weeks and his been happy.

Anyway... I managed to get 60mls out which means his either not had any milk at all and the sucking of the nipple just happened to soothe him, or his had 30mls and that’s it.

Why isn’t he taking the milk like he usually does? I sick of going from breastfeeding to bottles. I just wanna do one or the other and I fear if his not sucking properly or telling my body he needs the milk I’ll end up going to formula :/

I also drink 3litres of water a day
