Can anyone tell me if this is a gluten allergy?

So, I used to get alot of heartburn, bloating, gas and, diarrhea. I decided to go on a diet to lose weight and in doing so, I decided to take this opportunity to test out what was causing the bloating. I have a sensitivity to milk so I don't eat alot of dairy other than greek yogurt which doesn't bother me for some reason. I also am allergic to citrus and have to be really really careful in choosing the foods I put in my body and the chemicals I use in my house as citrus is in everything (I can't even have chewy prenatals). So, the first thing I cut out was processed sugars. I felt energetic after I did that and after testing that, I found that sugars made me lethargic but, didn't cause the symptoms above. Processed sugars are now, completely out of my diet. Next, I cut out caffeine. I didn't experience as many crashes in the day but, it still didn't cause my symptoms. Finally, I cut out simple carbs and switched to whole grain bread, sweet potatoes, etc. I felt better within 24 hours. I had never felt so good in my life and my poop (tmi) was actually a regular for the first time in years. It used to take me ages on the toilet and now I'm done in 10 minutes tops. My bloating was gone. I had no gas and no heartburn. I decided to never eat simple carbs again unless it was a special occasion. I've lost a bit of weight too by making these cuts so it's a win/win. Well, I recently ordered delivery for a veggie sandwich from my local sandwich shop on ancient grain/gluten free bread with vegan cheese. It gets here and the sandwich had ciabatta bread instead of the ancient grain that I asked for. I just shrugged my shoulders and figured that this one time wouldn't hurt. I was sick after though. All of the bloating came back and (tmi) I had a major blowout and barely made it to the toilet in time. I was down and out for the rest of the day. I went back to complex carbs again as usual and the next day I was feeling great again. Well, yesterday was my best friend's birthday party and he wanted pizza so, I ordered some. I had about a slice and half alongside a breadstick and felt fine throughout the night but, I had some God awful heartburn when I went to bed. Today, I woke up and felt awful though. I had another blowout episode when I woke up and am still sick and bloated and gassy. I seriously look pregnant right now. That's how bloated I am. So, it seems like the common denominator is bread. I heard that these could be symptoms of a gluten intolerance but, I'm not sure. Could someone help me figure this out. I'd normally go to a doctor but, with Covid-19 happening, I'm avoiding public medical places at all costs. Does anyone have any insight? Does anyone here have a gluten intolerance/allergy? Could you share your stories/symptoms with me? Do I simply need a probiotic or should I actually be concerned? I just don't want to feel like literal crap the day after a special occasion. TLDR; bread gives me the shits. Is it a gluten intolerance?
