Cinnamon Rolls😍

Recipe I used:

1/4 cup warm water- let 1 tbls dry yeast sit with 1/2 tsp sugar for 10 minutes.

Then add 3/4 cup of buttermilk, 6 tbls melted butter, 2 eggs, 1/2 cup sugar, and 1 tbls vanilla extract. Stir until combined.

Add 2 1/2 cups flour (bread flour works best but I've done with all purpose). Stir until combined.

Add 1 more cup of flour and knead for 5-6 minutes until dough is smooth and stretchy. Place in large oiled bowl and proof until doubled in size(hour and a half for me).

When ready flour your work surface and lightly knead and then roll out roughly to 18in-20in.

Spread 6 tbls very soft butter over dough.

Combine 1 cup packed light brown sugar with 2 tbls cinnamon and spread over buttered dough, press down firmly.

Tighlty roll starting at 18in side, cut into 1 1/2in tall rolls. Place in baking dish of choice that has either parchment paper or greased.

Proof until another hour and a half or until doubled in size.

Bake at 375° until browned on top and baked through (25 minutes for me).

For the icing:

6 oz softened cream cheese

1/2 cup butter softened

3-3 1/2 cups confectioners sugar

1 tsp vanilla extract

(I needed a splash of milk to get the consistency I wanted).

Spread over while warm.
