Low fat, low sugar lemon and apple cake!

After finding out I had Gestational Diabetes, I also found out I have gallstones! Which caused agonizing pain! (I am only 22 and normal fit and healthy!) I’ve cut out so many foods, and can only eat less that 5% fat in a meal until I can have my gallbladder removed (currently 32 weeks pregnant with my second) no red meat, no dairy, only wholegrain foods, fish, veg, fruit and very limited amounts of sugar.

I’ve been craving cake for weeks! And after much trial and error i made a delicious apple and lemon cake with no butter or oil! And only 1/3 cup of brown sugar!! This doesn’t make my sugars go too high nor does it upset my gallbladder! Win win! My two year old daughter and partner love it too!

Recipe:

4 Granny Smith apples

2 eggs

1/3 cup brown sugar

1 zest of lemon

2 tablespoons lemon juice

Pinch of salt

1 teaspoon vanilla extract

1 cup plain flour

3 teaspoons baking powder

Peel, core and thinly slice the apples.

Whisk together the eggs, sugar, lemon zest, lemon juice, vanilla extract, and salt until creamy.

Add flour and baking powder, whisk well until combined, add 2/3’s of the apples to the mixture.

Pour mixture into a greased and floured cake tin. Add remaining apples on top for decoration, if you wish sprinkle a little brown sugar on top.

Bake on 180c for 30 minutes! Remove, allow to cool, then enjoy!!
