Too strong punishment to put 5.5 year old to bed an hour early for throwing a fit about dinner?

My 5 and a half year old is the pickiest eater alive. No sensory issues, normal development. She refuses to eat any fruit or veggies except mashed potatoes. She picks at it and whines and screams after one bite or refuses to eat.

Tonight we made mashed potatoes, chicken, stuffing and corn. She refused to try stuffing, we put literally a TEASPOON of corn on her plate to eat.

She started whining at the plate as soon as she saw it. Then ate maybe 2-3 pieces mixed in potatoes. She also refused Apple at lunch except the tiniest bites you couldn't even see out of one slice.

I told her we gave her a TEASPOON of corn and she needs to finish it as I'm sick of her passing on meals and picking/screaming about food.

She refused, whined, screamed and I at the end of my patience told her to go to bed now, an hour before her bedtime. told me she's going to scream and cry in her room.

Is this an overreaction? I've never sent her to bed early but I am at the end of my rope.
