Why is my husbands cholesterol so high?

I hoping maybe there’s a dietician/ nutritionist here or someone who just knows a lot about food who can educate us.

My husband is in his late 30s and his cholesterol is 250. So really high. He’s 5’7 and 170 pounds. I think he may be considered overweight, but he does have a decent amount of muscle build (he’s a size 33 in pants for reference)

I don’t think it’s his exercise that’s lacking. He does work 8-5 m-f with no break, just to go use the bathroom so he’s sitting ALL day. But he’s always been very physically active after work an on weekends. He does Brazilian jitsu 3 times a week, sometimes two classes a night, and it’s a really intense workout. Each class in an hour long. On the nights he doesn’t do his classes he goes to the gym for about two hours, and does cardio and hitting the bag and lifts weights. The weekends he does his classes and then does a 3 mile jog

He eats very healthy too. We don’t order take out anymore, although we used to get pizza once a week. We have stopped doing that

He used to eat a lot of eggs. Now he only eats egg whites

Red meat- we used to have about once a week. Now we have it about once a month, and honestly it might even be less than that. I used to make meatballs every Sunday, but changed to ground Turkey instead of ground meat. Over the summer tho, he was eating burgers about once a week tho during bbqs.

He eats a ton of veggies and fruits

I make chicken cutlets a lot and do fry them. I make them about once a week- that will be the next thing we cut out, or cut down on.

Honestly, I’m at a loss as what to do to help him. We cut out egg yolks, red meat (for the most part) and pizza.

The doctor suggested making changes to his diet. But his diet is really good

If he can’t get his cholesterol down in 6 months he has to goin medication. My husband being as healthy as he is is bothered by that

I just don’t understand. He is so much healthier than means I don’t have high cholesterol
