Toddler food hacks

What are special meals you make to get your kid to eat a variety of new foods. My son is 2 and I feel like he's not willing to try new things even if he likes the flavors. Example he likes corn on the Cobb but will not touch corn otherwise.

We mix veggies in tomato sauce, add ovaltine to milk occasionally, chickpea/falafel with herbs, ground chicken, pork, turkey Meatballs with different flavors/seasoning.

My son likes broccoli, peas, cucumber, and lettuce so I feel pretty good with green veggies.

My son likes fresh boiled broccoli cooked in salted water, he won't touch frozen or raw. Lettuce he will eat 1/3 of what is offered with salad dressing and spits out or sucks off the dressing on the rest. I consider it a win.

We mostly struggle with non ground meats. He seems to have an aversion to meat texture
