Has anyone tested negative a week after missed period but then ended up having a positive pregnancy test after that?

It depends on a lot of factors-- id you have had long cycles before, if you ovulated late, if you ovulated twice, if you are breastfeeding, a drastic weight change/body fat content drop, medical conditions/stress, etc. There are just about as many reasons you may not be pregnant as there are reasons you may be/will be soon in this situation unfortunately. 
I used to skip up to 5 months in a row before having a period, while abstinent-- when I weighed around 114 lbs. I have had regular periods after gaining weight, but still have had a few weird cycles a year that extend up to 60 days before the next period, all while having unprotected sex and testing negative every week past the date my period is due. 
That stated, I got pregnant on a regular 32 day cycle the first time-- a strange 2 week cycle the second time-- and the third time on an enlongated cycle where I ovulated twice and did not test positive until 80+ days after my last period. 
I wish there was a better answer, but everyone is different. If irregular cycles are not your norm, reach out to your OBGYN.

No. You most likely ovulated later than normal. If you were late because of pregnancy you'd have a positive pregnancy test.
