Why 21?

I've noticed a couple comments about people's lives not truly starting until after 21 or using 21 as a marker for maturity/decision making. Absolutely nothing changed after I turned 21... But maybe that's because I never was a drinker and will never be one.
.
It just seems so strange to base things around when you can legally have alcohol as a basis for your person. Not everyone likes to drink or party.
.
This is nothing against those who do. If you find that an important age due to your like for alcohol that's just fine. I'm just a little flabbergasted at so many people's comments about being 21. In fact when I got married my aunt nearly had an aneurism because I wasn't able to drink at my wedding... But even if I was of age I would have just sipped sparkling cider either way because I like it better.
.
Does that make any sense? I just don't get why people think EVERYONE should make decisions based on their preferences instead of the preferences of those making the decision. I understand people wanting others to wait for mental and emotional maturity that comes with age... But I've heard so many alcohol related comments and it's just so strange to me!
