Post your favorite healthy recipe! I need more yummy healthy things to try!!

It sounds terrible but I LOVE egg and veggie oatmeal!!
(Just think of it as a replacer of rice, except there is an obvious difference of texture.)
For those of you who are interested here is the recipe:
1 poached eggs(do this last), try and get the egg as dry as possible.
Boil 1/4 c of bellpepper , 1/4 c onion, 1 clove garlic, and 3/4 cup spinach in 1 cup water.
Boil until soft.
Add 1/4 tsp garlic powder,
1/4 tsp onion powder,
salt and pepper to taste in water while boiling.
Add oatmeal and half ounce(about 1/8 cup) of cheese (any kind will do.)
Cook over medium to low heat until water is mostly gone.
Remove from heat,
cover for 3 minutes.
Remove from pot and place in bowl,
top with egg,
add more salt and pepper if needed.
(Optional) habenero hot sauce or any hot sauce you like.
It gives it a real nice kick!
