As a hairdresser that works only in organic products, there ARE safe products out there! Currently I work with organic salon solutions products (their is site has a salon locator), but there are several others out there. Do your research, be informed and be safe. Best of luck :)
I'd also like to add that the major concern is with the absorption of the coloring chemicals through the scalp/skin, so a mid-length color would be safe, as would balayage that doesn't touch the scalp.

You could try the natural stuff they have at Lush, it's like henna I think, you melt it in a pot and put it on your hair. It only really works for darker hair colours though.

If you do it professionally that way they you under the heater so you don't smell all the fumes then it should be fine as long as there's no bleach
