Chicken enchiladas?

I'm on the look out for some killer enchiladas. 
I've already looked Pinterest and haven't had much luck. Almost all of them are the 1/2 cup sour cream with cream of mushroom soup. 
I want something with real flavor.
Does anyone have any recipes they would be willing to share?

My husband is Mexican and his mom makes the best chicken enchilladas. I'll put the recipe to the best of my knowledge.

- boil chicken breasts in water with a little bit of chicken boullion 
- shred chicken and add pepper and lawrey's seasoning salt.
- on the stove heat as many corn tortillas as you want to make enchilladas 
- add a little bit of the chicken mixture inside each tortilla and roll up. Place one by one into the dish that you will cook them in.
- combine a can of regular tomato sauce and el pato spicy tomato sauce and pour over the enchilladas.
- top with crumbed quest fresco and bake at 350 until they are warm and cheese is melted.
- serve with lettuce, tomato, avocado and sour cream on the side

I switch out sour cream for ranch, and I use like 10x the amount of green chiles on everything. Sautéed onions/jalapeños and a bit if celery salt adds great flavor to any dish as well :)

These are a fave of mine. Pork and chicken are both great. It's this homemade enchilada sauce that really makes it amazing though. I double the sauce recipe, that's how good it is!

How do I keep my tortillas from ending up soggy? They are always mush, and leftovers are gross because of this. I need tips!

What makes enchiladas is the sauce. My favorite is a salsa verde. Look up tomatillo green sauce recipes for enchiladas. Yum😋

I can do my best.... I usually don't have a hard recipe I stick with, but I can give you the ingredients and an idea of how much and you can go from there!

2 cans shredded chicken or 3-4 chicken breasts

1 can green chiles

1/2-1 package cream cheese

Seasonings (I use what I have on hand; salt, pepper, some kind of chicken seasoning, etc)

Cook all that together and add a little milk if you think it's too thick. Then add some shredded cheese, whatever you have is fine but I usually use Colby jack of fiesta.

You can also add jalapeños or onions to that mixture of you want to.

After that is cooked, you will need

More shredded cheese

Tortillas

Green or red enchilada sauce (one big can or 2 small)

Put enough enchilada sauce in the bottom of a 9x13 to cover it (this is so they don't stick, so don't be skimpy!)

Take your tortillas and start assembling your enchiladas! Usually I'll just eyeball it; I make mine kind of thin, not big huge ones because it's rich! I can fit 12ish enchiladas in a 9x13.

After you have filled your pan (I usually squeeze them in there until there is no space left!) pour the rest of the enchilada sauce over the top, making sure to get plenty all around the edges, then cover with cheese. 
Cover with foil and Put in oven at 350 for around 10 minutes then take foil off and bake for about 5 more minutes, until bubbling.
Voila! One of my favorite meals :) I usually serve with rice :)
