I'm confused! Please no judgment!!

I'm currently 16w1d and I have been testing my blood sugars for the last 3 weeks or so.  I have definitely modified my diet (cut back significantly on sweets and trying to eat more protein).  I also try to walk for at least 10 min after most meals.  But I do still eat between 150-250 carbs a day.  But my blood sugars are usually fine after eating carbs as long as I walk after my meal.  But is it bad to eat carbs even if I walk afterwards??  I hear conflicting answers.
And for some reason my blood sugars have been high the past few mornings even tho I eat basically the same breakfast everyday.  There just seems to be no rhyme or reason to my blood sugars.  My numbers are just very inconsistent!  If I don't walk after a meal, sometimes I am fine, but other times my numbers are high.  Last night I couldn't walk after dinner and my blood sugar was 193 (the highest it's ever been by a long shot), which definitely has me freaked out!!! I ate a turkey sandwich with French fries.  Yes, I shouldn't have eaten the fries, but I've eaten fries before and been fine.  Has anyone else struggled with inconsistent numbers?
