Why does consent matter?

In regards to how a body is used once it is dead, why does consent matter? 
For example: you give consent to donate your organs after death, why is this even a thing? Why should we even get a say in what happens after we die? We're dead. If your organs can save 50 people (or something crazy like that) once you're dead, why should your lack of consent stop those people from living?
Clearly, you can see my opinion on the matter. I think, even if the thought makes us a little uncomfortable, all eligible bodies should be used to save others once the original owner has passed regardless of consent.
