poor mans dinner
Smothered chicken with rice and gravy.
My grandmother (Mary Ann) used to make this for her mother, so I guess it's a Southern Recipe.Â
Started out by coating the chicken wings in seasoned flour (salt pepper onion and garlic powder) and frying them in peanut oil.Â
Once the chicken was done, I poured all the oil off but left the pan drippings from the chicken. Put the skillet back on the heat and add diced onion and pour 1and 1/2 cups of chicken stock. Over and let simmer for about ten or 15 minutes.Â
Cook the rice according to the package instructions.Â
Plate up and enjoy 😊Â
