your go to weekly meals
Hubby and I have been trying to expand our easy weekly meals because frankly we are getting kinda sick of our meals. I look up recipes on the internet and Pinterest, in cook books but some are either not too easy or not that tasty... thought I would ask on here for those to share your easy family weekly meals. Have lucked out with finding some other good recipes but I want to ask all of you as well
Here is mine:
You'll need chicken breasts, whipping cream (1 1/2 cups), large can of cocktail fruits, 1 shallot, curry, salt and pepper, rice.
Start by getting the rice going.
Salt and pepper the chicken, oil and cook in pan then set aside in shallow bowl or plate that will collect the juices from the chicken.
Mince the shallot and add to pan on medium heat.
Then drain the canned fruits and add them to the pan. Cook for a couple min.
Add the whipping cream until simmering.
Then curry (1-2 tsp or until your liking) i keep sprinkling some in and tasting to see how much.
Add the chicken back with juices to the pan, salt and pepper to taste
