Idk... I think if you consider "interracial" relationships as between different races or ethnic groups, then yes, it would be interracial. The key word would be "ethnic" group since Mexican (and Latino) are not races.

Technically Hispanics are racially Caucasian (white) because Hispanic is a ethnicity not a race...most people however do consider this to be a mixed race couple for some reason. I'm in a Hispanic/nNon-Hispanic Caucasian relationship myself and I even had to explain to him that he is racially white. Kinda funny that most or don't realize that Spain is in Europe thus making all peoples with Spanish heritage white Europeans to be honest
