Gender/Sex definition

Not looking for an argument or debate, simply some clarification 😊 and to become more informed.

I understand there's a lot of tension surrounding gender/sex definitions and can be a sensitive topic for some people.

I have seen the statement that gender is what the person may identify as and Sex is the biological term for what sexual organs the person has from birth...

HOWEVER

I gave birth to my son 2 weeks ago, and all of his hospital notes say 'Gender: Male'
