Mermaid Cupcake Filling

We are doing these cupcakes for my daughters birthday party! The tail will be made out of a marshmallow fondant, frosting will be Swiss buttercream, and the cake with be white. What sort of filling should I choose? Should I also do a chocolate sheet cake to make everyone happy?
