One of my favorites:
TURKISH RED LENTIL SOUP
Ingredients:
Medium Onion, diced
1 clove garlic, minced
1/2 tsp of pepper flakes
1 tsp of dried mint
Tiny pinch of cumin
1 cup red lentils
2-3 tBsp tomato paste
Small potato, cubed
Medium carrots, cubed
Add beef or chicken stock about 1 litre
Add salt & pepper to taste
Sauté everything in order, make sure you take the time to caramelize everything then after adding stock
Let it simmer for 15-20 minutes
Blend with handheld blender or blender
Serve it with a wedge of lemon on the side
