Food help ?

So I am trying to make calories I am supposed to eat 2500 calories a day and drink a gallon of water. Water is ok. However I have eaten breakfast lunch and dinner and snacks in between and I am not even at 1500 calories What else can I do to get my calories in. What are some high calorie foods that aren't crap foods
