Meal ideas with veggies

Our daycare writes down each day what my daughter has for lunch with a checklist making sure we provided a grain, protein, fruit, and veggie. My LO used to just eat any veggies I sent in, but now hasn't been touching them. Any meal ideas with vegetables that your children enjoy?

My daughter loves green beans and carrots. We still use the pouches when she's having one of those days. She's obsessed with fruit so she's still eating sort of healthy.

So do I! So much pressure being a parent. Last night she had strawberries “straws” and an apple for dinner. But at least she ate. 😂

I feel the same way with the fruit! As long as it’s a bunch of different fruit of different colors and a little bit of veggies I call it a success!

I do no spiral his baked veggies. I only spiral his steamed veggies. Hope this info helped.

My son lovvvvvesss peas! Put some frozen peas in a Container by lunch they’ll be thawed and ready to eat. Butternut squash with a little cinnamon. Green beans, roasted peppers(no skin), acorn squash, cooked carrots, avocado

Sometimes if I cut the veggies differently it makes a huge difference. My son has been into wedges, sticks, diced, cut shapes...of...cucumbers, cooked carrots, avocados, sugar snap peas (stringy bits removed), zucchini, sweet potato, bell peppers. Sometimes the size is a big deal. Sometimes it's just novelty. I bought little shape cutters on a bento box website that I use to spice things up.

Do the best you can, but also don't worry too much if he just won't eat them. I can't get my middle son to eat veggies for the life of me (didn't have this problem with my first and third!) His dr said as long as he's eating a wide variety of fruits then to not worry about it. He very occasionally will eat the fruit/veggie pouches but that's about it.

My daughter loves steamed carrots (steam until softer but not mushy). She then Dips them in hummus. She also likes snap pea crisps (does that count?)   And Fresh slices of cucumber dipped in yogurt.
