How do you prefer your sauces for meals; particularly for meats?

I personally like any sauces that come with a meal placed to the side, even barbecue. (I like to actually taste my food.) I've noticed that in a lot of parts of the US, restaurants and such like to drown the food in sauces or bury food by piling stuff on it.

It depends on the meal. I like it on the side for salads, fries, chicken strips, etc. But if it's something like mashed potatoes or country fried steak or pasta then I like it on top. When it comes to barbecue I like it on top IF it's been cooked with it, but if it's just been grilled without being marinated then I like it on the side. If I had to choose one way to have my sauce served for every meal for the rest if my life, I'd pick on the side.

I have to ask for dry rub only or no sauce at all. I feel you.. I want to know if food is good, not the gravy..

I live in Louisiana. If a meat dish has a sauce it is drowned in it and the sauce is usually the showcase of the entree that is flavored by the meat.

Depends.Steak, on side. Chicken, either. Doesn't matter.
