Supply Cannot Meet Demand

My baby will be 8 weeks this Saturday😫. Do I still have hope in increasing my supply? She's my first child and I've struggled with breastfeeding despite taking a breastfeeding class. There's so much involved that no one tells you. I pump between .25-3 ounces per boob depending on if she gets on the breast before or after. I've seen a lactation consultant who outlined a plan for me, but it's been challenging to pump like she suggested with other personal demands along with caring for my baby. I'm getting really sad thinking I will not be able to catch up with her demand. I'm already not keeping up. I've been supplementing with formula since she was 1week old.
