Looking for Simple No Sugar Vanilla Cake Recipe

My son's first birthday is Monday and I'm making a vanilla cake with whipped coconut icing and this is the only simple vanilla cake recipe I could find that doesn't use sugar: http://www.familycircle.com/recipe/frosting/sugar-free-vanilla-snack-cake/ wondering if anyone else has a good recipe to offer before I commit to making this one... Needs to be simple, and use few ingredients, and use two round pans as I'm hoping to make two layers. TY
