Don't even try the doctor they will hardly be in there until the actual pushing out of the baby.  Your nurse will definitely advocate for you and have zero issues kicking out anyone that makes you feel uncomfortable.  Guaranteed.  We are literally taught in school to go to bat for patients whether it's between them and family or even them and the doctor.  They will take care of you.

Can you just not tell her when you're in labour? If my mum was being that selfish about it, I would just tell her once the baby was born so she didnt have a chance to bust in

You have a right to say who is there. If you tell them you don’t want her there they will ask her to leave. If she won’t leave she will be escorted out by security. Most maternity wards are locked these days though, so if you just tell the nurses you don’t want her back there they can keep her from even coming in at all.

She will need a pass from the front desk security to go up to your room, so if you go into labor and she shows up she will have to talk to them first, you have to tell security who you're expecting to show up.

You want to talk to the nurses. They'll be the ones around you mostly. You can express to them when you go in you don't want visitors and you'd only like (insert person here) allowed in/out.
They can then ask people to leave or have security remove them.
