So some days I feel like a total ace, and other days I’m super attracted to some people. It’s kind of like being genderfluid except with my sexuality. I get frustrated because I can’t properly express myself at times due to the lack of a proper word to describe how I identify. Does it exist and I just haven’t found it yet?

Yes there’s several that can go along with this! Here’s a few:
Abrosexual
One who’s sexuality fluctuates a lot
Aceflux
Someone who is always on the Ace-spectrum but the degree of sexual attraction fluctuates a lot
Greysexual
Someone who experiences sexual attraction every now and then
Quoisexual
One who can’t distinguish between the types of attraction. So upon looking at someone they like they can’t tell if they want to date, cuddle, or have sex with them. 
Acespike
Only experiencing a spike of sexual attraction every now and then. 
These are just the ones on the Ace-Spectrum cause those are the only ones I’m super familiar with but there’s plenty more out there if none of those fit
