Easy meatloaf!
Just tried out a super easy meatloaf recipe...mix ground beef with an egg or two, seasoning (I used parsley, tiny bit of garlic, salt), Italian bread crumbs, and milk. Make sure it’s not too “wet.” My SO is a tad picky, so I left out a few normal items (onions, carrots, whatever else can come in a more traditional meatloaf). Form into a loaf and place in SLOW COOKER! 😊 cook on low for about 5 hours. Some fat will build up in bottom portion of cooker, so with one hour left I carefully remove the loaf, empty fatty drippings. In a separate bowl, mix ketchup, Worcestershire sauce, stone ground mustard, a little A-1, and a little brown sugar. Glaze top of meatloaf for last 15 minutes. Allow meatloaf to set for 10 minutes before cutting.
Mash is a simple homemade with milk, butter, Parmesan, mozzarella, and cheddar cheese mix. I like to use more milk in mash for meatloaf, so it’s a bit creamier-you can really eat with the meat together.
I added corn to the top, and fresh cooked bacon bits, for looks, but also bc my SO works 12/day and likes to come home to a full meal! It was all so easy. I’ve also have a killer slow cooker lasagna that I can give the easy recipe for, if interested.
