Easy Summer Veggie Stew

Our dinner tonight! It was so healthy, quick, easy, and good!

1 onion

2 garlic cloves chopped

1 can whole tomatoes undrained

1 can diced tomatoes drained

1 zucchini

1/2 cup -1 cup of frozen corn

1/2 cup frozen broccoli

1 can of beans of your choice, rinsed and drained

As much spinach as you like

Season to taste- I used salt, pepper, garlic powder, and some Italian seasoning

Sauté in water the onion and garlic until onion is somewhat translucent. Then add in the rest and smash the whole tomatoes slightly. Let simmer for about 20 minutes.

We served over brown rice and loved it!
