Yes, modern paints are safe to use.  If you had to strip off wall paper and your home is older the 40 years old there is a possibility of lead paint on the walls.  This is only a danger when ingested so be sure to vacuum cervices and corners before and after you paint.

Yes my doctor said interior paint is usually okay, just wear a ventilator mask for any staining/outdoor paints if necessary!

Latex paint is safe. Oil based paint is best avoided because it has horrible fumes.
Sherwin William's has a great latex gloss that goes on as smooth as the oil based stuff though and their latex emerald paint has almost no fumes at all.

Yes, but be flexible with yourself!!! Don't put too much pressure to make it perfect & make sure you are not painting alone. Personal experience w both my boys- I went overboard w the stress bc it had to be perfect & each time I was unable to finish.  Having someone else step in to help or maybe take turns.
