Here's my sweet potato puree recipe 🍠
What you'll need:
- 1 medium sized sweet potato washed and peeled, cut into 1.5 inch pieces
- 1 1/2 cups of water (cool boiled if possible, depending on your quality of tap water)
- blender (normal blender is fine, I use a Kenwood with a nutri bullet type fitting)

Method:
1. Place sweet potato pieces and water in small saucepan and bring to the boil.
2. Boil for 10-13 minutes, until a fork passes through the pieces with ease.
3. Let cool for 15-20 minutes with lid on.
4. Add cooked sweet potato AND cooking water to bullet/blender.
5. Blend until smooth - no lumps. Add water for desired consistency.
6. Consume within 48 hours or freeze for up to two months.
7. Store in refrigerator and heat up by placing storage container in hot water (microwaving may create hot pockets and burn little mouths)
